The latest addition to the south Sydney hospitality scene, the newly opened Humphrey’s Hotel is located in Hurstville and is led by a team that includes Merivale and Sokyo alumni. And while the food offering looks fabulous there is plenty of buzz surrounding the hotel’s interiors – especially its bathrooms!
Situated just 20 minutes’ drive from the Sydney CBD, Humphrey’s Hotel occupies an entire storey of a new architectural build. The establishment boasts elevated bistro dining, an all-weather terrace and a sports bar, and features interiors created by Melissa Collison Design. The creative force behind Lotus in Double Bay and Sake Restaurant and Bar (a favourite of Jen and I!), Melissa and her team have created another memorable series of spaces.
Melissa’s vision has been brought to life with marble, gold accents, natural timber, hand-laid mosaic tiling, statement lighting and bold wallpaper.
And while the entire venue is a visual feast, it’s the bathrooms that have people talking. An often overlooked, mundane space, we love it when designers put extra special effort into bathroom design as it makes the overall experience just that bit more luxe. And these bathrooms are super luxe; from Gucci wallpaper to gold swan taps, hand-laid mosaic tiling and an explosion of bold tones, the bathrooms scream luxury and opulence.
The venue also features Hatch which is a modern-Australian dining experience that has a Mediterranean flair and a focus on meats and seafood. It’s pitched as refined but approachable dining with a heavy focus on food provenance.
Humphrey’s has also developed a bespoke cocktail menu featuring a creative twist on the classics. Highlights include the Lamana Margarita which is a classic Margarita flipped on its head with the use of strawberry gum; a Tiramisu Old Fashioned which features coffee, chocolate and cacao bitters, and the A-List Affair which is a fun take on the Pornstar Martini where guests are served the cocktail alongside a small glass of bubbles.
